Everyday. A general term for an event where people gather to mark a special occasion. Very largely interchangeable, but 'festivity' often emphasizes the joyful atmosphere more broadly, while 'celebration' can be more specific to the event itself. 'The celebration of her birthday' and 'The birthday festivity' both work.

Literary/Formal. Refers to a state of being cheerful and lighthearted. Interchangeable when referring to the mood or atmosphere of joy, but 'gaiety' doesn't refer to the event itself, only the feeling. 'The gaiety of the party' works, but you wouldn't say 'We attended a gaiety'.
